Egg Muffins
I have seen a decent amount of egg cupcake recipes on various blogs. Decided to give them a try because they make for a convenient portable snack.
Ingredients:
12 Eggs
3/4 Cup chopped Onion
1/5 Cup Chopped Green Pepper
8 oz Poultry Sausage
4 Slices of Bacon
Ground Pepper and salt for taste
grass-fed Butter (Kerrysgold)
Steps:
Cook the bacon on medium heat in a pan. When done remove bacon and put to the side. Sauté the onion and green pepper in the bacon grease. After about 5 minutes of sautéing add the sausage and brown.
In a separate bowl whisk twelve eggs. If you want the muffins to turn out a little more “creamy” you can use cheese or a heavy cream. Add the onion, pepper, and sausage mixture as well as the bacon to the eggs.
Take a greased muffin sheet (I used the butter to grease) and fill with the egg mixture. My ingredients were just enough to do a 12 muffin pan (medium-sized muffins). Put them in the oven, at 350 degrees, for around 15 minutes or when an inserted knife comes out clean from the middle of a muffin.
Let cool and you can freeze whatever ones you don’t eat right away. Toss them in the microwave for a quick snack or meal on the go!
