Oh delicious guacamole, how I love you

Looking for a great meal that a paleo eater and non-paleo eater can enjoy together? Try fajitas!

I am pretty close to as gluten-free as I can be (without the occasional slip up), however my wife likes to enjoy a grain here and there. So, we usually try focusing our meals around a protein source (meat – not big soy fans), adding some good veggies, and doing an additional starch or grain that she wants.

Fajitas are a great option because ever individual can just make up a plate however they want it. What did I go with? Chicken (marinated in lime juice, garlic, & olive oil), black olives, salsa, sautéed onions & peppers, and guacamole. Want some additional dairy for mass gain? Throw in some full fat sour cream. Keeping with the grains? Wrap it all up in a tortilla.

It’s not the hardest thing in the world to eat Paleo in a household that doesn’t. You just have to make sure to plan your meals with everyone, and everyone can enjoy them together.

Another plus about cooking clean food at dinner is having great leftovers. My lunch was the leftovers all tossed onto a salad, beats your 100 calorie pack huh?

    No wonder there is a weight problem in kids in this country. I like the “little bites” snacks too. It’s all about the marketing and there are definite parallels with the cigarette companies in the (evil) way they do it.
